Monsters are entities that can spawn in different locations at different levels and rarities. With each level, their health, damage, defense, souls dropped, and other abilities can increase. For example, a level 1 normal rarity bat could have 9 health points and maybe one ability, but a level 7 would have much more life, and probably a few abilities.
Monsters also have hit points (HP) and attack (atk) base stat bonuses which range from 1 to an unknown maximum which is only achievable by breeding. In the wild however monsters' base stat bonuses are capped at 50. The current known highest value is 53.
If you are looking for Bosses, they have their own page.
There are technically 7 different rarities, but only 4 come with an extra traits represented by a prefix added to name and change in color. Monster rarity level determines the highest skill level that monster can reach (e.g. a divine monster can only reach a level 6 in a skill, even if it has a skill that can have a max level of 7). During breeding, the offspring cannot have a higher rarity level than it's parents.

Note: monster color is actually not dictated by monster rarity but hidden value called "shinyness". Wild monster rarity and shiny levels correlate, but bred monsters can have different rarity and shiny levels at same time. (ex.: black rare chicken),
